- 1 teaspoon Baking Powder
- 2 tablespoons Fresh Rosemary, finely chopped
- 6 tablespoons (85g) Unsalted Butter, ice-cold, cubed
- 1/2 cup (50g) Grated Parmesan Cheese, freshly grated
- 1/2 cup (120ml) Ice Water, plus extra as needed
- Extra All-Purpose Flour or Semolina, for dusting
Instructions
- In a large mixing bowl, combine the all-purpose flour, fine sea salt, and baking powder. Whisk for about 30 seconds.
- Add the finely chopped fresh rosemary and whisk to distribute.
- Incorporate the cubed, ice-cold unsalted butter into the flour mixture until it resembles coarse crumbs.
- Stir in the freshly grated Parmesan cheese until evenly distributed.
- Add ice water gradually, mixing until the dough comes together into a shaggy ball.
- Gather the dough, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Dust your work surface with flour or semolina and line baking sheets with parchment paper.
- Remove chilled dough, optionally divide it for easier handling, and roll it out as thinly as possible.
- Cut the dough into desired shapes and transfer to prepared baking sheets, pricking each cracker with a fork.
- Preheat your oven to 350°F (175°C).
- Bake crackers for 12-18 minutes, rotating halfway through for even browning.
- To achieve crispiness, lower the oven temperature and bake for an additional 5-10 minutes if necessary.
- Cool completely on a wire rack before storing in an airtight container.
