2 1/4 cups powdered sugar, sifted
1 1/2 tablespoons unsalted butter, softened
2 teaspoons peppermint extract
2 tablespoons heavy cream
10 ounces dark chocolate (60–70% cacao), chopped or in chips
1 tablespoon coconut oil

Instructions
Combine powdered sugar, softened butter, peppermint extract, and heavy cream in a mixing bowl, and beat until smooth.
Roll the dough into small balls (1 inch in diameter) and flatten to form discs.
Place the discs on a parchment-lined baking sheet and freeze for 15-20 minutes.
Melt dark chocolate and coconut oil in a double boiler until smooth.
Dip each frozen disc into the melted chocolate, ensuring complete coating.
Place the coated patties back on the parchment-lined baking sheet.
Refrigerate for about 15 minutes or until the chocolate has fully set.
