- 10 ounces dark chocolate (60–70% cacao), chopped or in chips
- 1 tablespoon coconut oil
Instructions
- Combine powdered sugar, softened butter, peppermint extract, and heavy cream in a mixing bowl, and beat until smooth.
- Roll the dough into small balls (1 inch in diameter) and flatten to form discs.
- Place the discs on a parchment-lined baking sheet and freeze for 15-20 minutes.
- Melt dark chocolate and coconut oil in a double boiler until smooth.
- Dip each frozen disc into the melted chocolate, ensuring complete coating.
- Place the coated patties back on the parchment-lined baking sheet.
- Refrigerate for about 15 minutes or until the chocolate has fully set.
- Enjoy or store in an airtight container.
Notes
Keep refrigerator-stored patties for up to 3-4 days. Freeze for up to 2 months, wrapped individually.
