Ingredients

  • 1 1/2 tablespoons unsalted butter, softened
  • 2 teaspoons peppermint extract
  • 2 tablespoons heavy cream
  • 10 ounces dark chocolate (60–70% cacao), chopped or in chips
  • 1 tablespoon coconut oil

Instructions

  1. Combine powdered sugar, softened butter, peppermint extract, and heavy cream in a mixing bowl, and beat until smooth.
  2. Roll the dough into small balls (1 inch in diameter) and flatten to form discs.
  3. Place the discs on a parchment-lined baking sheet and freeze for 15-20 minutes.
  4. Melt dark chocolate and coconut oil in a double boiler until smooth.
  5. Dip each frozen disc into the melted chocolate, ensuring complete coating.
  6. Place the coated patties back on the parchment-lined baking sheet.
  7. Refrigerate for about 15 minutes or until the chocolate has fully set.
  8. Enjoy or store in an airtight container.

Notes

Keep refrigerator-stored patties for up to 3-4 days. Freeze for up to 2 months, wrapped individually.
