Ingredients

  • 1/2 cup ( 1 stick) unsalted butter, softened to room temperature
  • 4 cups (about 1 pound) powdered sugar, sifted
  • 1/4 cup heavy cream or milk, plus more if needed
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure peppermint extract (or to taste)
  • A pinch of salt
  • 16 ounces (about 2 2/3 cups ) semi-sweet chocolate chips or chopped baking chocolate
  • 2 tablespoons coconut oil or vegetable shortening (optional)

Instructions

  1. Line two large baking sheets with parchment paper or silicone baking mats.
  2. Beat the softened butter in a large mixing bowl until light and fluffy.
  3. Incorporate the heavy cream, vanilla extract, peppermint extract, and a pinch of salt.
  4. Slowly add the sifted powdered sugar one cup at a time until fully mixed.
  5. If the mixture is dry, add more heavy cream until a cohesive mixture forms.
  6. Portion the dough using a small cookie scoop; roll and flatten into discs.
  7. Chill formed patties in the refrigerator or freezer until firm.
  8. Prepare melted chocolate using a double boiler or microwave.
  9. Dip each chilled patty into the melted chocolate and transfer to a lined baking sheet.
  10. Chill again until chocolate is set, about 15-30 minutes.
