- 1/2 cup (1 stick) unsalted butter, softened to room temperature
- 4 cups (about 1 pound) powdered sugar, sifted
- 1/4 cup heavy cream or milk, plus more if needed
- 1 teaspoon pure vanilla extract
- 1 teaspoon pure peppermint extract (or to taste)
- A pinch of salt
- 16 ounces (about 2 2/3 cups) semi-sweet chocolate chips or chopped baking chocolate
- 2 tablespoons coconut oil or vegetable shortening (optional)
Instructions
- Line two large baking sheets with parchment paper or silicone baking mats.
- Beat the softened butter in a large mixing bowl until light and fluffy.
- Incorporate the heavy cream, vanilla extract, peppermint extract, and a pinch of salt.
- Slowly add the sifted powdered sugar one cup at a time until fully mixed.
- If the mixture is dry, add more heavy cream until a cohesive mixture forms.
- Portion the dough using a small cookie scoop; roll and flatten into discs.
- Chill formed patties in the refrigerator or freezer until firm.
- Prepare melted chocolate using a double boiler or microwave.
- Dip each chilled patty into the melted chocolate and transfer to a lined baking sheet.
- Chill again until chocolate is set, about 15-30 minutes.
