  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • ½ cup honey BBQ sauce
  • ¼ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Optional: chopped vegetables (bell peppers, corn, peas)
  • Garnish: green onions or parsley

Instructions

  1. Sear the Chicken: Heat oil in a large skillet over medium heat. Season cubed chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5–6 minutes until browned on all sides.
  2. Make the Sauce: Mix BBQ sauce and honey in a bowl. Pour the mixture over the chicken and stir to coat evenly.
  3. Add Rice and Broth: Stir in the uncooked rice and chicken broth. Bring to a boil, then cover and simmer on low heat for 18–20 minutes.
  4. Finish the Dish: Uncover, fluff the rice with a fork, and let any excess liquid absorb. Garnish with chopped green onions or parsley and serve hot.

Notes

Add chopped veggies during the last 10 minutes of simmering for extra nutrition and color. This dish reheats well and makes great leftovers.
