- 2 medium sweet potatoes
- 1/2 cup feta cheese, crumbled
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., thyme or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice sweet potatoes into 1/4 inch rounds and place them on a baking sheet.
- Drizzle the sweet potato slices with olive oil and season with salt and pepper.
- Roast in the oven for 20-25 minutes, or until lightly browned and tender.
- Remove from the oven and drizzle each round with honey, then top with crumbled feta cheese.
- Return to the oven for another 5 minutes to warm the feta.
- Garnish with fresh herbs before serving.
