Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix honey, minced garlic, soy sauce, olive oil, salt, and pepper to create the glaze.
  3. Place the chicken thighs on a sheet pan and drizzle half the glaze over them.
  4. Add the mixed vegetables to the sheet pan, drizzle with the remaining glaze, and toss to coat.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
