1 pound honey garlic sausage
2 large sweet potatoes, diced
2 tablespoons olive oil
1 tablespoon honey
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the diced sweet potatoes, olive oil, honey, salt, and pepper. Toss until well coated.
Spread the sweet potatoes on one side of a baking sheet.
Cut the honey garlic sausage into bite-sized pieces and place them on the other side of the baking sheet.
Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and the sausage is browned, stirring halfway through.
Remove from the oven and garnish with fresh parsley if desired. Serve warm.
