- 1 pound honey garlic sausage
- 2 large sweet potatoes, diced
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, olive oil, honey, salt, and pepper. Toss until well coated.
- Spread the sweet potatoes on one side of a baking sheet.
- Cut the honey garlic sausage into bite-sized pieces and place them on the other side of the baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and the sausage is browned, stirring halfway through.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm.
Notes
For extra flavor, add dried herbs like thyme or rosemary to the sweet potato mixture. If you want crispier sweet potatoes, cut them smaller.
