Ingredients

  • 1 lb carrots
  • 1 lb parsnips
  • 2 tablespoons wildflower honey
  • 2 tablespoons butter
  • 2 teaspoons fresh thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the carrots and parsnips into uniform pieces, about 1/2 to 3/4 inch thick.
  3. Melt the butter and combine with honey, salt, and pepper in a large bowl, then toss with the vegetables.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the oven for 25–30 minutes, stirring halfway through.
  6. Add thyme during the last 5 minutes of roasting.
  7. Serve warm, adjusting the seasoning with salt and honey as necessary.

Notes

For a lighter option, substitute butter with olive oil.
