Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup hot water
  • 1/2 cup milk
  • 6 tablespoons hot cocoa powder
  • 4 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups heavy whipping cream
  • 1 1/4 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, milk, melted butter, and hot water until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18-22 minutes.
  6. Let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  7. In a chilled bowl, whip the heavy cream and confectioners’ sugar until stiff peaks form.
  8. Once cupcakes are cool, frost with the whipped cream and garnish as desired.
  9. Serve immediately or store as directed.
