Ingredients

  • 1 3/4 cups all purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup marshmallow fluff for frosting
  • 1/2 cup powdered sugar for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk briefly.
  3. Add softened butter, eggs, milk, and vanilla. Beat until smooth.
  4. Fold in mini marshmallows gently.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 50 to 60 minutes or until a toothpick comes out clean. Start checking at 50 minutes.
  7. Let the loaf cool completely before frosting.
  8. For the frosting, mix marshmallow fluff and powdered sugar until smooth. Add milk if needed.
  9. Spread the frosting over the cooled loaf and enjoy.
