Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup sliced red onions
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Sour cream for serving (optional)
  • Guacamole for serving (optional)

Instructions

  1. Heat a skillet over medium heat and add olive oil. Sauté sliced red onions and bell peppers until softened, about 5–7 minutes.
  2. Add shredded chicken, BBQ sauce, honey, and hot sauce to the skillet. Cook until heated through, about 2–3 minutes. Season with salt and pepper.
  3. Assemble tortillas by adding cheese and the chicken filling. Fold over to create a half-moon shape.
  4. Cook each quesadilla in the skillet until golden brown, about 2–4 minutes per side. Ensure cheese is melted.
  5. Remove from skillet and keep warm. Slice into wedges and garnish with cilantro. Serve with sour cream and guacamole.
