Crunchy, melty quesadillas filled with spicy-sweet hot honey BBQ chicken and two kinds of cheese – a perfect quick and satisfying meal.

- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 2 tablespoons honey
- 1 teaspoon hot sauce, adjust to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup sliced red onions
- 1/2 cup chopped bell peppers, any color
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Sour cream for serving (optional)
- Guacamole for serving (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add sliced red onions and chopped bell peppers, cooking until softened. Stir in the shredded chicken, BBQ sauce, honey, hot sauce, and season with salt and pepper. Mix well and keep warm.
- Grate the cheddar and mozzarella cheese. Prepare your workspace with tortillas, filling, and cheese.
- Heat a large non-stick skillet over medium heat and coat with olive oil.
- Place one tortilla in the skillet, sprinkle 1/4 cup cheese over half, add a generous amount of the Hot Honey BBQ chicken filling, and top with another 1/4 cup cheese. Fold the tortilla over to create a half-moon and gently press.
- Cook for 2-4 minutes per side until golden brown and crispy, and cheese is melted.
- Remove the quesadilla, slice into wedges, and keep warm while cooking remaining quesadillas. Serve garnished with fresh cilantro, sour cream, and guacamole if desired.
Notes
Don’t overstuff the tortillas to avoid trouble while flipping. Adjust the heat for optimal crispiness.
