- 4 boneless, skinless chicken breasts
- 1/2 cup hot honey
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 1/4 cup low-sodium soy sauce
- 2 tbsp fresh lime juice
Instructions
- Gather ingredients and chop vegetables.
- Pat chicken dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-6 minutes on each side until golden brown and cooked through.
- In a small bowl, mix hot honey with soy sauce and lime juice. Add this mixture to the pan.
- Toss in vegetables during the last few minutes of cooking until they are tender yet crisp.
- Serve chicken over rice or quinoa, and drizzle with extra sauce.
