A warm and creamy dip featuring a luxurious blend of smoked gouda and crispy beef bacon, perfect for any gathering.

- 8 oz smoked gouda cheese, shredded
- 8 oz sharp cheddar cheese, shredded
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 cup cooked beef bacon, crumbled
- 3 green onions, sliced
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt, to taste
Instructions
- Cook beef bacon in a skillet over medium heat until crispy, about 8 to 12 minutes. Drain excess grease and crumble, setting aside some for garnish.
- Shred smoked gouda and sharp cheddar cheese. Slice green onions, reserving half for garnish.
- In a mixing bowl, combine cream cheese, sour cream, and mayonnaise; beat until smooth.
- Add garlic powder, smoked paprika, and black pepper to the creamy base, mixing well.
- Fold in crumbled beef bacon, two-thirds of shredded gouda and cheddar, and reserved green onions.
- Preheat oven to 375°F (190°C). Lightly grease a baking dish and spoon in the dip mixture.
- Top with remaining gouda and cheddar, and bake for 20 to 25 minutes until bubbly and golden brown.
- Let dip rest for 5 to 10 minutes, then garnish with reserved beef bacon and green onions. Serve with crackers or vegetables.
Notes
For a spicy version, add cayenne pepper or red pepper flakes. Can be made ahead and baked when ready to serve.
