  • 1 to cups of granulated sugar (adjust to taste)
  • 1 tablespoon lemon juice (optional)
  • Optional spices: cinnamon, vanilla, or nutmeg

Instructions

  1. Prep the Peaches: Wash, peel, pit, and slice the peaches. To peel easily, blanch in boiling water for 1–2 minutes, then transfer to an ice bath.
  2. Cook the Peach Mixture: Place peaches and ½ cup water in a large pot. Simmer until soft (about 10–15 minutes). Blend into a smooth consistency using an immersion blender or food processor.
  3. Add Sugar & Spices: Stir in sugar (start with 1 cup and adjust to taste), lemon juice (if using), and optional spices. Cook over medium-low heat for 30–45 minutes, stirring regularly, until the mixture thickens and passes the sheet test (falls in a sheet from the spoon).
  4. Prepare Jars: Sterilize jars in boiling water for 10 minutes. Keep jars warm until ready to fill.
  5. Can the Peach Butter: Using a funnel, fill jars with peach butter, leaving ¼ inch of headspace. Remove air bubbles, wipe rims, and secure lids and bands (finger-tight). Process jars in a water bath canner for 10 minutes.
  6. Storage: Let jars cool undisturbed for 24 hours. Check seals, then store in a cool, dark place for up to 12 months.

Notes

Add warm spices like cinnamon or nutmeg for flavor depth. Use the spoon test to ensure the right texture—thick enough to mound on a spoon.
