This crisp and cooling salad combines juicy watermelon, crunchy cucumber, and fresh mint with a zing of lime and optional salty feta. It’s a simple, hydrating summer dish perfect as a side or light lunch.
Ingredients

- 2 cups watermelon, cubed
- 1 medium cucumber, thinly sliced (peeled if preferred)
- A handful of fresh mint leaves, torn
- Juice of 1 lime
- A pinch of sea salt
- (Optional) 2 tbsp feta cheese, crumbled
- (Optional) A few slices of red onion or fresh basil
Instructions
- Chop & Prep: Cube the watermelon into bite-sized pieces. Slice the cucumber and tear the mint leaves.
- Combine & Dress: Place the watermelon, cucumber, mint, and optional red onion or basil into a large bowl. Squeeze the lime juice over the salad, sprinkle with sea salt, and add crumbled feta if desired.
- Chill or Serve: Serve immediately or refrigerate for 10–15 minutes to allow flavors to meld.

- Store leftovers in an airtight container in the fridge for up to 2 days.
