Description

Ingredients

  • 2 cups watermelon, cubed
  • 1 medium cucumber, thinly sliced (peeled if preferred)
  • A handful of fresh mint leaves, torn
  • Juice of 1 lime
  • A pinch of sea salt
  • (Optional) 2 tbsp feta cheese, crumbled
  • (Optional) A few slices of red onion or fresh basil

Instructions

  1. Chop & Prep: Cube the watermelon into bite-sized pieces. Slice the cucumber and tear the mint leaves.
  2. Combine & Dress: Place the watermelon, cucumber, mint, and optional red onion or basil into a large bowl. Squeeze the lime juice over the salad, sprinkle with sea salt, and add crumbled feta if desired.
