Ingredients

  • 1 medium apple
  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar
  • ¼ teaspoon cinnamon
  • A pinch of nutmeg
  • A pinch of cardamom
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • 1 tablespoon baking powder
  • 7 tablespoons unsalted butter – cubed & cold
  • 1 large egg
  • ⅔ cup buttermilk
  • ½ teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • ¼ teaspoon cinnamon
  • A pinch of nutmeg
  • A pinch of cardamom

Instructions

  1. Peel and dice the apple, then cook with butter, brown sugar, and spices until tender and caramelized. Let cool.
  2. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  3. In a bowl, mix flour, sugar, salt, baking powder, and baking soda.
  4. Add cubed cold butter to the dry ingredients and cut in until crumbly.
  5. In another bowl, whisk egg, buttermilk, and vanilla.
  6. Mix wet ingredients into dry until just combined, then fold in cooled apple mixture.
  7. Turn the dough onto a floured surface, shape, and cut into scones.
  8. Place on the baking sheet, brush with buttermilk, and sprinkle with sugar and spices.
  9. Bake for 15-20 minutes until golden brown.
  10. Cool on a wire rack before serving.
