Ingredients

  • 4 honey crisp apples (peeled, cored, thinly sliced, about 1.5 lbs)
  • 2 eggs
  • 1/3 cup sugar
  • 1/2 cup milk (warmed)
  • 2 tablespoons butter (melted)
  • 1 teaspoon pure vanilla (or vanilla bean)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • Sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 11 by 5 inch loaf pan with parchment paper.
  2. Peele and core the apples, then slice them into 1/8 inch rings using a mandoline or knife.
  3. In a large bowl, beat the eggs and sugar together until thick and pale (1-2 minutes).
  4. Incorporate the warmed milk, melted butter, and vanilla into the egg mixture.
  5. Sift in the flour, salt, baking powder, and optional cinnamon. Blend until combined.
  6. Gently fold in the sliced apples until they are well-coated in the batter.
  7. Arrange the apple slices in the loaf pan, filling it to the top and pour any leftover batter over the apples.
  8. Optional: Sprinkle thinly sliced almonds on top.
  9. Bake for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
  10. Allow the cake to cool on a wire rack for at least 30 minutes before slicing.
  11. Serve with a dusting of powdered sugar, ice cream, or warm caramel.
