Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 leeks, cleaned and sliced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onions and leeks in a little oil until soft.
- Add the diced potatoes and broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Blend the soup until smooth, then stir in the heavy cream.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For a vegan option, use coconut cream instead of heavy cream. You can adjust the thickness of the soup by adding more or less broth.
