Description

A warm and comforting Irish Potato Soup that’s creamy and delicious, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 leeks, cleaned and sliced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onions and leeks in a little oil until soft.
  2. Add the diced potatoes and broth; bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. Blend the soup until smooth, then stir in the heavy cream.
  5. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, use coconut cream instead of heavy cream. You can adjust the thickness of the soup by adding more or less broth.
