Description

Ingredients

  • 2 cups (200g) graham cracker crumbs
  • ½ cup (115g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup (240ml) sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup (70g) brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ teaspoon cinnamon
  • ½ cup (115g) cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  3. In another bowl, beat the softened cream cheese until smooth. Add in 1 cup of granulated sugar and vanilla extract, mixing until combined. Add the eggs one at a time, mixing on low speed.
  4. Fold in the sour cream until fully incorporated.
  5. Pour the cheesecake filling over the pre-baked crust and smooth the top.
  6. In a medium bowl, combine diced apples with ⅓ cup brown sugar, 1 teaspoon cinnamon, cornstarch, water, and lemon juice. Stir to coat the apples.
  7. Spread the apple mixture evenly over the cheesecake filling.
  8. For the crumble topping, mix together flour, ½ cup brown sugar, and ½ teaspoon cinnamon. Cut in cold butter until crumbly. Sprinkle over the apples.
  9. Bake for about 1 hour, or until the center is set. Allow to cool before refrigerating for at least 4 hours or overnight.
  10. Serve chilled and enjoy!

Notes

Serve with whipped cream or caramel sauce, and store leftovers in the refrigerator for up to 5 days.
