Ingredients

- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1 cup milk (or almond milk)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup blueberries
- Honey or maple syrup (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix the mashed bananas, oats, milk, eggs, vanilla, baking powder, cinnamon, and salt until well combined.
- Gently fold in the blueberries.
- Divide the mixture evenly into the muffin tin cups, filling to about three-quarters full.
- Bake for about 20-25 minutes, or until the tops are golden and set.
- Let cool slightly before removing from the tin. Serve warm and enjoy!
Notes
These oatmeal cups freeze beautifully. If using frozen blueberries, toss them in a bit of oats first to avoid staining the batter.
