- 1/2 cup chopped onion
- 1/4 cup butter, melted
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 cup crushed Ritz crackers (about 25 crackers)
- 1/4 cup butter, melted
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Slice squash and combine with onion in a large bowl.
- Melt butter and pour over squash mixture, stirring to coat.
- In a separate bowl, mix cream of mushroom soup and milk. Add to squash mixture along with cheddar cheese and stir well.
- Transfer mixture to a greased casserole baking dish.
- Combine crushed Ritz crackers with remaining melted butter and sprinkle over the squash mixture.
- Bake for 25–30 minutes, until the top is golden brown and bubbling.
- Allow to cool slightly before serving.
