- Prepare the Dough: In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined. Set aside.
- Make the Cheesecake Filling: In a medium bowl, combine softened cream cheese, sugar, and vanilla. Beat until smooth. Transfer to a piping bag for easy filling.
- Shape the Cookies: Scoop and roll dough into 1-inch balls. Flatten each dough ball or shape into a donut using a cutter. Pipe a small amount of cheesecake filling into the center or ring of each dough piece. Carefully fold the dough over the filling and seal the edges completely.
- Coat with Cinnamon Sugar: In a shallow dish, mix together the cinnamon and sugar. Roll each stuffed cookie in the mixture until fully coated.
- Bake: Preheat oven to 350°F (175°C). Place cookies on a parchment-lined baking sheet and bake for 12–15 minutes, or until golden brown. Let cool on a wire rack.
- Optional: Drizzle with caramel sauce before serving.
Notes
Make sure cream cheese is softened to avoid lumps in the filling. For extra indulgence, serve slightly warm with caramel drizzle.
