Instructions

  1. Prepare the Dough: In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined. Set aside.
  3. Make the Cheesecake Filling: In a medium bowl, combine softened cream cheese, sugar, and vanilla. Beat until smooth. Transfer to a piping bag for easy filling.
  4. Shape the Cookies: Scoop and roll dough into 1-inch balls. Flatten each dough ball or shape into a donut using a cutter. Pipe a small amount of cheesecake filling into the center or ring of each dough piece. Carefully fold the dough over the filling and seal the edges completely.
  5. Coat with Cinnamon Sugar: In a shallow dish, mix together the cinnamon and sugar. Roll each stuffed cookie in the mixture until fully coated.
  6. Bake: Preheat oven to 350°F (175°C). Place cookies on a parchment-lined baking sheet and bake for 12–15 minutes, or until golden brown. Let cool on a wire rack.
  7. Optional: Drizzle with caramel sauce before serving.
