- 3 ripe bananas, mashed
- 1 cup Greek yogurt, plain or vanilla
- 1/4 cup melted butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all purpose flour
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the bananas in a large mixing bowl until smooth.
- Stir in Greek yogurt, melted butter, sugar, eggs, and vanilla extract until well combined.
- In another bowl, whisk together baking soda, salt, flour, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For dairy-free, substitute butter with coconut oil and yogurt with a dairy-free alternative. Add-ins like chocolate chips or nuts are welcome!
