Ingredients
1 cup all-purpose flour
1 cup sharp cheddar cheese, freshly grated
1/2 cup unsalted butter, cold and cubed
1/2 tsp fine sea salt
2 – 4 tbsp cold water

Instructions
In a large mixing bowl, whisk together the all-purpose flour and fine sea salt until well combined.
Add the cold unsalted butter cubes and cut into the flour until it resembles coarse crumbs.
Stir in the freshly grated sharp cheddar cheese until evenly distributed.
Gradually add cold water, mixing gently until the dough starts to come together.
Turn the dough onto a floured surface, gather into a ball, flatten into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll the chilled dough into a very thin rectangle, about 1/16 to 1/8 inch thick.
Cut the dough into desired cracker shapes and transfer to the prepared baking sheet.
Poke holes in the center of each cracker to prevent puffing.
Bake for 12-15 minutes, or until golden brown and very crisp.
Remove from the oven and cool completely on a wire rack.
Store in an airtight container at room temperature for up to one week.
