- 2 boneless, skinless chicken breasts
- 1 cup of spinach, chopped
- 1 cup of cream cheese, softened
- 1/2 cup of mozzarella cheese, shredded
- 1/4 cup of Parmesan cheese, grated
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1 tablespoon of olive oil
- 1 tablespoon of Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, combine spinach, cream cheese, mozzarella, Parmesan, garlic, and Italian seasoning; mix until smooth.
- Pat chicken breasts dry; cut pockets into the thickest side of each breast.
- Stuff the pockets with the filling; secure openings with toothpicks if desired.
- Heat oil in an oven-safe skillet over medium heat; sear each stuffed breast for 3–4 minutes per side.
- Transfer skillet to the oven; bake for 25–30 minutes until internal temperature reaches 165°F (74°C).
- Remove from oven, let rest for 5 minutes, then slice and serve.
Notes
Use room temperature cream cheese for easier mixing. If using frozen spinach, thaw and squeeze out excess moisture.
