  • 1 pound Italian sausage
  • 4 slices of bacon, chopped
  • 2 cups of spinach
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare your ingredients by gathering all the necessary items.
  2. In a large pot, heat olive oil over medium heat and cook the chopped bacon until crispy (about 5 to 7 minutes). Remove bacon and set aside.
  3. Add the Italian sausage to the same pot and brown it, breaking it apart for even cooking (about 5 minutes).
  4. Stir in chopped onion and minced garlic, cooking until onions are translucent (approximately 3 to 4 minutes).
  5. Add spinach and cannellini beans, cooking for an additional 2 to 3 minutes until the spinach wilts.
  6. Pour in the chicken broth, add oregano, salt, and pepper, then stir well and bring to a gentle simmer.
  7. Allow the soup to simmer for 15 to 20 minutes to meld flavors.
  8. Return the crispy bacon to the pot before serving.
