- 1 pound Italian sausage
- 4 slices of bacon, chopped
- 2 cups of spinach
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prepare your ingredients by gathering all the necessary items.
- In a large pot, heat olive oil over medium heat and cook the chopped bacon until crispy (about 5 to 7 minutes). Remove bacon and set aside.
- Add the Italian sausage to the same pot and brown it, breaking it apart for even cooking (about 5 minutes).
- Stir in chopped onion and minced garlic, cooking until onions are translucent (approximately 3 to 4 minutes).
- Add spinach and cannellini beans, cooking for an additional 2 to 3 minutes until the spinach wilts.
- Pour in the chicken broth, add oregano, salt, and pepper, then stir well and bring to a gentle simmer.
- Allow the soup to simmer for 15 to 20 minutes to meld flavors.
- Return the crispy bacon to the pot before serving.
Notes
For enhanced flavor, use high-quality Italian sausage and don’t skip the bacon.
