  • 2 inch piece fresh ginger, sliced
  • 4 whole scallions, chopped
  • 10 button mushrooms, sliced thin
  • Salt

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add sweet onion wedges and garlic cloves, sauté until fragrant and slightly golden, about 3-5 minutes.
  2. Add beef and chicken broth followed by water. Raise the heat to high and bring to a gentle boil.
  3. Add carrots, ginger slices, and scallions. Reduce heat to low and simmer for 30-40 minutes. Near the last 5 minutes, add mushrooms. Season with salt to taste.
  4. Use a sieve or strainer to remove large vegetable pieces, creating a clear broth. Serve hot, garnishing with additional sliced scallions if desired.
