Description

This churro-inspired cookie by Joanna Gaines features a soft and chewy center, a crisp cinnamon-sugar coating, and a hint of tanginess from cream cheese. A cozy, bakery-style treat perfect for sharing.

Ingredients

Scale

Cinnamon Sugar Coating:

  • ½ cup sugar
  • 1 tablespoon cinnamon

Cookie Dough:

  • ½ cup unsalted butter, room temperature
  • ¼ cup (2 oz) cream cheese, room temperature
  • ¾ cup light brown sugar, packed
  • ¼ cup sugar
  • 1 egg, room temperature
  • 2 tsp vanilla extract
  • 2⅓ cups all-purpose flour
  • 2 tsp ground cinnamon
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a small bowl, combine ½ cup sugar and 1 tablespoon cinnamon to make the coating. Set aside.
  3. In a stand mixer, cream together the butter, cream cheese, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract. Mix until well combined.
  5. In a separate bowl, whisk together the flour, cinnamon, cornstarch, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
  7. Using a cookie scoop (~1.5 oz per ball), portion the dough and press the tops into the cinnamon sugar mixture.
  8. Place the dough balls on the prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 10 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  11. Store in an airtight container for up to 5 days.

Notes

For a twist, drizzle with white chocolate or sandwich with dulce de leche. These cookies freeze well before or after baking.
