Description Crispy and golden butternut squash fritters that are tender inside, perfect for any occasion.

Ingredients

  • 1 medium butternut squash ( 2.5 – 3 pounds)
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh sage, finely chopped

Instructions

  1. Peeled and halve the butternut squash, scoop out seeds, and grate it.
  2. Remove excess moisture from the grated squash using a clean towel.
  3. In a mixing bowl, whisk together flour, Parmesan, baking powder, smoked paprika, salt, and pepper.
  4. Add beaten eggs and minced garlic to the dry ingredients, stirring until just combined.
  5. Incorporate the grated squash, parsley, and sage; mix gently.
  6. Refrigerate the batter for 15-20 minutes.
  7. Heat oil in a skillet over medium-high heat to about 350°F (175°C).
  8. Drop spoonfuls of batter into the hot oil, frying until golden brown, about 3-4 minutes per side.
  9. Drain cooked fritters on paper towels.
  10. Serve warm with a dipping sauce of yogurt, mayonnaise, dill, chives, and lemon juice.
