Crispy and golden butternut squash fritters that are tender inside, perfect for any occasion.

- 1 medium butternut squash (2.5–3 pounds)
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese (optional)
- 1 teaspoon baking powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh sage, finely chopped
- Vegetable oil for frying
Instructions
- Peeled and halve the butternut squash, scoop out seeds, and grate it.
- Remove excess moisture from the grated squash using a clean towel.
- In a mixing bowl, whisk together flour, Parmesan, baking powder, smoked paprika, salt, and pepper.
- Add beaten eggs and minced garlic to the dry ingredients, stirring until just combined.
- Incorporate the grated squash, parsley, and sage; mix gently.
- Refrigerate the batter for 15-20 minutes.
- Heat oil in a skillet over medium-high heat to about 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, frying until golden brown, about 3-4 minutes per side.
- Drain cooked fritters on paper towels.
- Serve warm with a dipping sauce of yogurt, mayonnaise, dill, chives, and lemon juice.
Notes
For best results, squeeze out as much moisture as possible from the squash before mixing. Adjust seasonings to taste.
