Ingredients

  • 8 oz high-quality dark chocolate, chopped
  • 1 cup heavy cream
  • Zest of 2 large oranges
  • 2 tbsp unsalted butter, room temperature
  • 1 tsp non-alcoholic orange extract
  • 1 tbsp fresh orange juice
  • Sea salt, to taste
  • Coatings: unsweetened cocoa powder, powdered sugar, festive sprinkles, chopped nuts

Instructions

  1. Chop dark chocolate and place in a heatproof bowl.
  2. Heat heavy cream with orange zest until simmering, then remove from heat.
  3. Steep cream for 10-15 minutes, then strain over chocolate.
  4. Let sit for 5 minutes, then stir until smooth.
  5. Add butter, orange extract, juice, and salt to ganache, stirring until fully incorporated.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Check ganache texture; if needed, let sit at room temperature or chill further.
  8. Prepare a baking sheet lined with parchment paper.
  9. Scoop ganache into tablespoon portions and roll into balls.
  10. Chill truffles for 30-60 minutes to firm up.
  11. Roll chilled truffles in desired coatings.
  12. Refrigerate coated truffles for 15-30 minutes to set the coatings.
