Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower, chopped
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and minced garlic; sauté until softened.
  3. Stir in the beef broth, cauliflower, tomato paste, Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
  4. Lower the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
  5. Serve hot, garnished with chopped green onions.
