- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower, chopped
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onion and minced garlic; sauté until softened.
- Stir in the beef broth, cauliflower, tomato paste, Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
- Lower the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
- Serve hot, garnished with chopped green onions.
Notes
Store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for up to 2 months. Reheat gently over low heat.
