This Key Lime Pie Yogurt Bark is a refreshing and healthy snack that tastes just like key lime pie without all the fuss. Perfect for breakfast or a treat!

- 3.5 tbsp key lime juice (fresh or bottled)
- 2 tbsp powdered Swerve (or 1 tbsp honey)
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1/3 cup crushed gluten-free graham crackers
- 1/4 cup toasted unsweetened coconut
- 1 scoop vanilla protein powder (regular or dairy-free)
Instructions
- Prepare Baking Sheet: Lay a sheet of parchment paper over a large baking sheet.
- Combine Wet Ingredients: In a medium mixing bowl, combine key lime juice, lime zest, powdered Swerve (or honey), vanilla extract, and protein powder. Whisk well.
- Fold in Greek Yogurt: Add Greek yogurt to the mixture and gently fold until smooth.
- Spread Yogurt Mixture: Pour the yogurt mixture onto the baking sheet and spread it out into an even layer.
- Add Toppings: Sprinkle crushed graham crackers and toasted coconut over the mixture.
- Freeze Until Solid: Freeze for at least 3-4 hours or overnight until solid.
- Break and Serve: Remove from freezer, lift off the parchment, and break into bite-sized pieces.
- Store Leftovers: Place remaining bark in an airtight container and store in the freezer for up to 2-3 weeks.
Notes
For prettier pieces, run a knife under hot water before slicing. Enjoy straight from the freezer for the best experience.
