Bright, tangy Key Lime Pie Yogurt Bark combines classic dessert flavors with high protein Greek yogurt for a refreshing snack.
Ingredients

- 2.5 cups Greek yogurt, plain, non-fat or low-fat
- 3.5 tbsp key lime juice
- 2 tbsp powdered Swerve (or 1 tbsp honey)
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1/3 cup crushed gluten-free graham crackers
- 1/4 cup toasted coconut, unsweetened
- 1 scoop vanilla protein powder
Instructions
- Prepare a baking sheet with parchment paper covering the entire surface.
- In a bowl, mix key lime juice, lime zest, sweetener, vanilla extract, and protein powder. Whisk until dissolved.
- Fold in Greek yogurt until smooth and uniform.
- Spread the yogurt mixture on the prepared baking sheet to about 1/4 to 1/2 inch thick.
- Sprinkle crushed graham crackers and toasted coconut evenly over the mixture.
- Freeze for at least 3-4 hours or overnight until solid.
- Once frozen, break the bark into bite-sized pieces.
- Store leftovers in an airtight container in the freezer for up to 2-3 weeks.
Notes
For extra crunch, consider adding chopped nuts or fruit. Ensure to taste the mixture before freezing and adjust sweetness as needed.
