Ingredients

- 2.5 cups Greek yogurt, plain, non-fat or low-fat
- 3.5 tbsp key lime juice
- 2 tbsp powdered Swerve (or 1 tbsp honey, to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1/3 cup crushed gluten-free graham crackers
- 1/4 cup toasted unsweetened coconut
- 1 scoop vanilla protein powder
Instructions
- Prepare a baking sheet by lining it with parchment paper.
- Combine the key lime juice, lime zest, sweetener, vanilla extract, and protein powder in a mixing bowl and whisk until combined.
- Gently fold in the Greek yogurt until smooth.
- Spread the mixture evenly on the lined baking sheet.
- Sprinkle crushed graham crackers and toasted coconut over the top.
- Freeze for 3 to 4 hours or overnight until solid.
- Remove from the freezer, break into pieces, and serve immediately.
- Store leftovers in an airtight container in the freezer for up to 2 to 3 weeks.
Notes
Avoid overmixing the yogurt mixture to prevent a gluey texture. Line the baking sheet to ease removal of the bark.
