Description

A quick and easy chilled snack that combines the flavors of key lime pie with the creaminess of yogurt for a healthy, protein-packed treat.


Ingredients

  • 2.5 cups Greek yogurt, plain, non-fat or low-fat
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered Swerve (or 1 tbsp honey, to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted unsweetened coconut
  • 1 scoop vanilla protein powder

Instructions

  1. Prepare a baking sheet by lining it with parchment paper.
  2. Combine the key lime juice, lime zest, sweetener, vanilla extract, and protein powder in a mixing bowl and whisk until combined.
  3. Gently fold in the Greek yogurt until smooth.
  4. Spread the mixture evenly on the lined baking sheet.
  5. Sprinkle crushed graham crackers and toasted coconut over the top.
  6. Freeze for 3 to 4 hours or overnight until solid.
  7. Remove from the freezer, break into pieces, and serve immediately.
  8. Store leftovers in an airtight container in the freezer for up to 2 to 3 weeks.

Notes

Avoid overmixing the yogurt mixture to prevent a gluey texture. Line the baking sheet to ease removal of the bark.
