- 1 pound ground beef (or turkey for a healthier option)
- 1 cup breadcrumbs
- 1/2 cup grated carrot
- 1/2 cup chopped onion
- 1/4 cup chopped bell pepper
- 1 egg, beaten
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup (for glaze)
- 1 tablespoon brown sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by either greasing it or lining with muffin cups.
- In a large mixing bowl, combine the ground beef, breadcrumbs, grated carrot, chopped onion, chopped bell pepper, beaten egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.
- Scoop the meat mixture into the prepared muffin tin, filling each cup about 3/4 full.
- In a small bowl, mix together the ketchup and brown sugar. Spoon a dollop of the sweet ketchup glaze on top of each meatloaf muffin.
- Bake in the preheated oven for 20-25 minutes or until the muffins are cooked through and the tops are slightly caramelized.
- Once out of the oven, let them cool for a few minutes before serving.
Notes
For added nutrition, you can sneak in finely chopped zucchini or spinach. Make ahead by preparing the mixture a day in advance.
