- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp sesame oil
- 1/2 tsp crushed red pepper flakes
- 2 cups cooked white rice
- 1 medium cucumber, thinly sliced
- 1 medium carrot, julienned or spiralized
- 2 scallions, chopped
- 1 tsp sesame seeds
- Optional: fried egg, gochujang drizzle, or extra veggies
Instructions
- Cook the rice according to package instructions and set aside.
- Heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles.
- Stir in garlic and ginger, cooking for about 1 minute until fragrant.
- In a small bowl, whisk together soy sauce, brown sugar, sesame oil, and red pepper flakes. Pour over the beef and simmer for 2–3 minutes.
- Assemble the bowls: Add a serving of rice, top with ground beef mixture, and arrange cucumber slices and carrots.
- Garnish with scallions and sesame seeds, and serve immediately.
Notes
For best freshness, add cucumbers and carrots just before serving. Use lean ground beef for a healthier option.
