Ingredients

  • 1 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 34 carrots, chopped
  • 34 potatoes, cubed
  • 1 onion, chopped
  • 2 cups beef broth
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix soy sauce, brown sugar, garlic, sesame oil, and ginger to create the marinade.
  3. Place the beef chuck roast in a large roasting pan and pour the marinade over it, ensuring the beef is well-coated.
  4. Add the chopped vegetables around the beef.
  5. Pour in the beef broth and season with salt and pepper.
  6. Cover the roasting pan with foil and roast in the preheated oven for about 180-240 minutes, or until the beef is tender.
  7. Once cooked, remove the beef and let it rest for a few minutes before slicing.
  8. Serve the pot roast with the vegetables and garnish with green onions.
