Description
A classic French-style blueberry tart featuring a buttery pâte sablée crust and a naturally sweet and tangy wild blueberry filling. Perfect served plain or with a dollop of whipped cream or crème fraîche.

- 250g pâte sablée (homemade or store-bought)
- 500g fresh or frozen wild blueberries
- 80g sugar (adjust to taste)
- 2 tbsp cornstarch or flour
- 1 tsp lemon juice
- Optional: zest of one lemon, vanilla extract, or a pinch of cinnamon
Instructions
- Preheat oven to 180°C (350°F).
- Roll out the pâte sablée and line a 9-inch tart pan. Prick the base with a fork.
- In a bowl, mix the blueberries with sugar, cornstarch, lemon juice, and any optional additions like zest, vanilla, or cinnamon.
- Pour the berry mixture evenly into the prepared tart crust.
- Bake for 35–40 minutes, or until the crust is golden brown and the filling is bubbly and set.
- Let cool completely before serving. Optionally top with crème fraîche, whipped cream, or a dusting of powdered sugar.
Notes
If using frozen blueberries, do not thaw them before mixing with other ingredients to prevent excess liquid. For a richer flavor, serve with vanilla ice cream or lemon whipped cream.
