- 4 cup Chicken broth or vegetable broth
- ½ cup Heavy cream
- ¼ cup Dry white wine – Optional
- 8 oz Lasagna noodles – Broken into pieces
- ½ cup Ricotta cheese – Room temperature
- 1 cup Mozzarella cheese – Shredded
- ¼ cup Parmesan cheese – Freshly grated
- 2 tablespoon Cream cheese – Optional
- Salt and pepper – To taste
- 1 teaspoon Italian seasoning
- ½ teaspoon Red pepper flakes – Optional
- 2 Bay leaves
- 2 tablespoon Fresh basil – Chopped, for garnish
Instructions
- Heat a large pot over medium heat, add ground beef or sausage and cook until browned. Drain excess fat if needed.
- Add diced onion, minced garlic, and diced bell pepper; cook until softened, about 5 minutes.
- Stir in crushed tomatoes, tomato paste, chicken broth, and white wine. Add lasagna noodles and seasonings; bring to a boil, then simmer partially covered for 20 minutes until noodles are tender.
- Remove bay leaves, stir in heavy cream, cooked meat, and cream cheese if using; simmer for another 5 minutes.
- Mix in ricotta cheese, then ladle soup into bowls, topping with mozzarella and Parmesan cheese. Garnish with fresh basil and serve hot.
