  • 4 cup Chicken broth or vegetable broth
  • ½ cup Heavy cream
  • ¼ cup Dry white wine – Optional
  • 8 oz Lasagna noodles – Broken into pieces
  • ½ cup Ricotta cheese – Room temperature
  • 1 cup Mozzarella cheese – Shredded
  • ¼ cup Parmesan cheese – Freshly grated
  • 2 tablespoon Cream cheese – Optional
  • Salt and pepper – To taste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Red pepper flakes – Optional
  • 2 Bay leaves
  • 2 tablespoon Fresh basil – Chopped, for garnish

Instructions

  1. Heat a large pot over medium heat, add ground beef or sausage and cook until browned. Drain excess fat if needed.
  2. Add diced onion, minced garlic, and diced bell pepper; cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato paste, chicken broth, and white wine. Add lasagna noodles and seasonings; bring to a boil, then simmer partially covered for 20 minutes until noodles are tender.
  4. Remove bay leaves, stir in heavy cream, cooked meat, and cream cheese if using; simmer for another 5 minutes.
  5. Mix in ricotta cheese, then ladle soup into bowls, topping with mozzarella and Parmesan cheese. Garnish with fresh basil and serve hot.
