Description

A creamy and bright shrimp orzo dish that comes together in under 30 minutes, perfect for a weeknight dinner.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 1/2 cups orzo
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 lemon, zest and juice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp parsley, chopped

Instructions

  1. Season shrimp with salt, black pepper, garlic powder, and onion powder.
  2. Heat 1 tbsp butter and the olive oil in a large skillet over medium-high heat. Sear shrimp 1–2 minutes per side until just pink; remove shrimp from skillet and set aside.
  3. Reduce heat to medium and add remaining butter to the skillet. Add minced garlic and cook until fragrant, about 30–45 seconds.
  4. Add orzo to the skillet and toast for about 1 minute, stirring constantly.
  5. Pour in the chicken broth along with the lemon zest and juice. Bring to a simmer and cook, stirring occasionally, until the liquid has been mostly absorbed, about 8–10 minutes.
  6. Stir in heavy cream and Parmesan cheese; adjust seasoning with salt and pepper to taste.
  7. Return the seared shrimp to the skillet and toss gently to coat and warm through, about 1–2 minutes. Sprinkle with chopped parsley and serve warm.

Notes

For a lighter option, substitute half-and-half for heavy cream. Use low-sodium chicken broth for better control over salt.
