- 2 cups powdered sugar
- 1/4 cup freshly squeezed lemon juice (more or less to reach desired consistency)
- 1 tablespoon melted butter
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing and flouring it.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Beat in eggs one at a time, incorporating each fully before adding the next. Then mix in vegetable oil.
- In a separate bowl, whisk together buttermilk, lemon juice, lemon zest, and vanilla extract.
- Gradually add dry ingredients into the wet mixture, alternating between the two, starting and ending with dry ingredients. Mix until just combined.
- Stir the batter gently to ensure all ingredients are incorporated.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a wooden skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, lemon juice, melted butter, and lemon zest. Adjust lemon juice for desired consistency.
- Once the cake is cooled, pour glaze over the top and allow it to set for at least 30 minutes before serving.
Notes
Garnish with extra lemon zest or fresh berries for additional flavor.
