Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar; mix until it resembles wet sand. Press into a 12-cup muffin tin and bake for 8-10 mins.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add 1 ½ cups granulated sugar and mix well. Add eggs one at a time, mixing well after each. Stir in heavy cream, lemon juice, lemon zest, and vanilla until just combined.
- Pour the filling into the cooled crusts and bake for 18-22 minutes until edges are set.
- Cool in the oven with the door cracked for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- For lemon curd, whisk together ½ cup sugar, ¼ cup lemon juice, and eggs in a saucepan. Add butter and salt, cooking over medium-low heat until thickened (about 10 mins). Cool before topping cheesecakes.
- Top each cheesecake with lemon curd and garnish with berries or lemon slices before serving.
