Ingredients

  • 2/3 cup sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/3 cups all-purpose flour
  • 1/2 cup sanding sugar
  • 1 1/2 cups fresh cranberries, washed and patted dry
  • 1 large lemon, zested and juiced (keep zest and juice separate)
  • 1 1/2 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare baking sheets.
  2. Whisk the all-purpose flour in a medium bowl and set aside.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add egg yolks, lemon zest, and vanilla, mixing well.
  5. Pour in fresh lemon juice and mix until just combined.
  6. Gradually add the whisked flour mixture and mix until just incorporated.
  7. Fold in the cranberries gently.
  8. Chill the dough for 30 minutes (optional).
  9. Scoop dough onto prepared baking sheets, spacing them 2 inches apart.
  10. Bake for 10 to 12 minutes until edges are lightly golden.
  11. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
  12. Store cookies in an airtight container at room temperature.

Notes

For a sweeter flavor, adjust sugar to taste. Chill dough for best results.
