- 2/3 cup sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 1/2 cup sanding sugar
- 1 1/2 cups fresh cranberries, washed and patted dry
- 1 large lemon, zested and juiced (keep zest and juice separate)
- 1 1/2 cups confectioners’ sugar
Instructions
- Preheat your oven to 375°F (190°C) and prepare baking sheets.
- Whisk the all-purpose flour in a medium bowl and set aside.
- Cream together the softened butter and sugar until light and fluffy.
- Add egg yolks, lemon zest, and vanilla, mixing well.
- Pour in fresh lemon juice and mix until just combined.
- Gradually add the whisked flour mixture and mix until just incorporated.
- Fold in the cranberries gently.
- Chill the dough for 30 minutes (optional).
- Scoop dough onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
- Store cookies in an airtight container at room temperature.
Notes
For a sweeter flavor, adjust sugar to taste. Chill dough for best results.
