Description

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes (or up to 1 hour in the refrigerator).
  3. Preheat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop.
  4. Remove the salmon from the marinade and place it skin-side down on the grill.
  5. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
  6. Transfer the grilled salmon to a serving platter. Garnish with lemon slices and fresh parsley before serving.

Notes

Do not over-marinate the salmon, as the acid in lemon juice can start to cook the fish. Keep the grill clean and well-oiled to prevent sticking. Use an instant-read thermometer to check for doneness, as salmon is perfectly cooked at 145°F (63°C).
